La tortilla

“We make our food fresh and homemade corn tortillas for some of our plates.” Here is what that looks like, from masa to basket.

  1. 1

    Masa

Corn dough, pinched off and rolled into a ball.

  2. 2

    The press

Pressed flat and round between the two plates.

  3. 3

    The comal

Cooked on the hot griddle and flipped until it puffs.

  4. 4

    The tortillero

Into the basket under a cloth, to stay soft and warm.

Nuestras raíces

De Huauchinango a Tempe

Huauchinango sits in the misty mountains of Puebla’s Sierra Norte, a town known across Mexico as “la ciudad de las flores” for its azaleas. That is where this family comes from, and where the cooking comes from: mole poblano, tamales and corn tortillas made by hand.

“Our Restaurant is unique we make our food fresh an homemade corn tortillas for some of our plates. We are from Huauchinango Mexico.”
